This wine is fresh and elegant, also produced exclusively with 100% Sangiovese Grosso. Coming from the same production zone, it has a disciplinary that permits us to produce 10 quintal of grapes more the Brunello. This wine is placed on the market from the first of September following the harvest. The alcoholic fermentation, followed by a brief soaking, permits us to extract few phenols and tannins, to give emphasis to the fresh perfumes that are characteristic of the youn wines. Aged for 8 months into big barrels of Slavonian oak, the wine is then bottled and refined for some months before being placed in the market. The taste is fresh and dry, very balanced, it emits some agreeable flavourings of wood-fruits, violet and cherry. It has to be served at a temperature between 16-18°C, matching it with first dishes with meat sauces, roast red and white meats, seasoned cheeses.
